National Culinary Conference
The 2nd National Culinary Conference is on in Chennai till October 5, 2005.
Over 300 executive chefs and F & B professionals are taking part in the conference, said to be the largest-ever gathering of culinary professionals in the country, organised by the Indian Federation of Culinary Associations, the nodal body of the regional culinary federations of India and the country's sole representative in the World Association of Cooks Societies
(WACS).
An eminent panel of speakers will address the delegates, Chef Edwin Brown, the Secretary-General of WACS leading from the front. The galaxy of speakers features Shoba Narayan - Winner of the James Beard Foundation's MFK Fisher Award for Distinguished Writing, Chef Sanjeev Kapoor - TV Personality and Coookbook writer, Ramesh 'Ned' Nedungadi - Wine Expert from Norway, Chef Oliver Soe Thet from Myanmar, Chef Mougam Pareatumbee from Mauritius, among others.
The topics range from culinary tourism to food journalism, restaurant interiors to cuisine concepts - over three days.
"The event is a great opportunity for everyone in the country to witness and share what is going on in the culinary field in India," remarked Chef K Natarajan, president of the South Indian Culinary Association.
"Our aim is to make India ready for the Asia-Pacific Culinary Conference 2007 and eventually bid for the World Culinary Congress in 2012. It is a follow-through post the major milestone of our becoming the member of the WACS, which we achieved after India had been trying unsuccessfully for a few years," says Chef Soundararajan P, the director of the organising committee. The country's prestigious culinary awards will also be given away at the conference.
A feature of the event is an exhibition on the sidelines of the conference at Hotel Le Royal
Meridien.
"The idea behind the conference is to bring the culinary fraternity together, network them, expose them to the latest trends and in the process take IFCA and the culinary profession to new heights," said Chef Vijay Nagpal, member of the organising committee.
