Lip smacking salads
Alright, so you are one of those who firmly believes in health foods. Especially, because salads are excellent not only for health but also help to fill you up without adding those extra calories. However, you cannot think of an approaching mealtime with excitement because it is salad. Well then, this one is for you. Each salad recipe given here is a meal in itself and includes all the important food groups. Each recipe can serve about four persons.
| 1.Chicken salad |

Boiled and shredded chicken - 1 cup
1 cucumber diced
1 tomato diced
½ cup cabbage- shredded finely
1 small potato- boiled and diced
hung curd- 1 cup
spring onion finely chopped-1/4 cup
garlic paste- ½ tsp
chaat masala- 1 tsp
salt and sugar to taste |
i) In a mixing bowl, add the chicken, cucumber, tomato potato and cabbage and mix well.
ii) In another bowl, add the hung curd, salt ,sugar and garlic paste and mix well.
iii) Now pour this onto the chicken and veggies and mix thoroughly. Sprinkle a little chaat masala and garnish with the chopped spring onions. Refrigerate the salad for about half an hour before serving. |
| 2. Frozen salad |
| Ingredients: |

1 packet of lemon jelly crystals
¼ cup- shredded cabbage
¼ cup- shelled peas (steam lightly)
¼ cup- shredded carrots
¼ cup- very thinly sliced beans (steam lightly)
salt to taste
a pinch of sugar if desired |
i) Mix all the veggies, salt and sugar and put into a mould.
ii) Now mix jelly as per instructions on the packet, and pour over the veggies and freeze till jelly sets.
iii) Remove from the refrigerator and over turn the mould. Serve your frozen salad cold.

| 3. Mayonnaise |

Hung curd- 1 cup
Mustard powder- 2 tsps
Lemon juice- 3-4 drops
Oil- 1tsp
Salt to taste |
i) Put all the ingredients in a bowl (except the oil) and blend well. Start slowly and increase the speed gradually.
ii) When the mixture is smooth and the consistency is like sauce, gradually add oil. One drop at a time. Stirring constantly. Your mayonnaise is ready for use.

4. Mix ’n’ match salad

Diced pineapple-1 cup
Lettuce leaves(roughly chopped)-1 cup
Hardboiled egg diced-1
Shredded chicken- ¼ cup
Boiled peas-1/4 cup
Finely chopped spring onions-1/4 cup
Mayonnaise-1/2 cup
Salt to taste |
i) Mix all the ingredients (except a part of the spring onions and the mayonnaise) in a mixing bowl.
ii) Now add the mayonnaise and mix well.
iii) Garnish with spring onions. |
