Briefly: It is basically boiled vegetables prepared in
coconut milk.

Ingredients

- Soak red lobiya/karamani
- Pressure cook till soft but should not form mass
- Cut red and white pumpkin into thin flat squares 2"
- Slice green chillies
- To extract coconut milk
- Grate 1 coconut and pour 2 tbsp of water; grind and squeeze out the milk. This is called the first milk; 2nd and 3rd milk can also be obtained.
Pass through sieve to get pure milk

Karamani :1/2 cup
- Red pumpkin :cut into squares 1 cup
- White pumpkin :1 cup
- Green chillies :3
- Curry leaves :2 sprigs
- Salt to taste
- Coconut milk :1 cup
- Coconut oil :1 tsp

Method
Remove skin and cut the pumpkins into small squares.
Pressure cook karamani till cooked but do not overcook.
Boil Karamani and the pumpkins together. Again, do not over cook but make sure it is not raw either. Add very little water and also add salt while cooking.
When the vegetables are cooked, add the coconut milk and allow it to boil just once. Turn off the fire, sprinkle with oil and garnish with curry leaves.
Serve with rice and sambar.
